Moong dal is packed with high-quality protein and is low on carbs. It is rich in potassium, iron and many other vitamins and minerals. It has a powerful effect on free radicals, thereby exerting an anti-inflammatory effect.



Ingredients

2 cups moong sprouts

½ cup mint leaves

½ cup coriander leaves

1 green chili

1-inch ginger chopped

¼ cup red rice poha or red rice flour

Salt

4 onions

Cumin seeds

Oil

Directions:

FOR CREPE BATTER

  1. Wash moong sprouts and transfer to a blender, with ginger, chilli, red rice poha, salt and some water
  2. Dilute with ¼ cup water to get a thick but pouring consistency

FOR CARAMELIZED ONIONS

  1. Peel 4 onions, sliced fine
  2. Heat oil, add cumin seeds and add sliced onions
  3. Sauté till golden brown (should take 12-15 minutes for 4 onions)
  4. Drain oil for later use and keep onion aside

TO PREPARE CREPES

  1. Place tawa over moderate heat and smear oil
  2. When hot, spoon a ladle of batter on tawa and spread to form crepe
  3. Cook till desired crispiness and flip
  4. Keep warm and now spread the caramelized onions to each crêpe, fold over and serve.
  5. Top it with podi/ serve with pudina chutney or just enjoy on its own
