Moong dal is packed with high-quality protein and is low on carbs. It is rich in potassium, iron and many other vitamins and minerals. It has a powerful effect on free radicals, thereby exerting an anti-inflammatory effect.
Ingredients
2 cups moong sprouts
½ cup mint leaves
½ cup coriander leaves
1 green chili
1-inch ginger chopped
¼ cup red rice poha or red rice flour
Salt
4 onions
Cumin seeds
Oil
Directions:
FOR CREPE BATTER
- Wash moong sprouts and transfer to a blender, with ginger, chilli, red rice poha, salt and some water
- Dilute with ¼ cup water to get a thick but pouring consistency
FOR CARAMELIZED ONIONS
- Peel 4 onions, sliced fine
- Heat oil, add cumin seeds and add sliced onions
- Sauté till golden brown (should take 12-15 minutes for 4 onions)
- Drain oil for later use and keep onion aside
TO PREPARE CREPES
- Place tawa over moderate heat and smear oil
- When hot, spoon a ladle of batter on tawa and spread to form crepe
- Cook till desired crispiness and flip
- Keep warm and now spread the caramelized onions to each crêpe, fold over and serve.
- Top it with podi/ serve with pudina chutney or just enjoy on its own
