This bruschetta is refreshing and light. It packs a solid garlic punch, with bursts of flavour explosions from the basil.



Ingredients

1 baguette, cut into rounds

1½ cup cherry tomatoes, cut into quarters

½ cup fresh basil leaves, thinly sliced or dried powder
¼ cup sun-dried tomatoes, roughly chopped (or substitute with fresh tomatoes)
½ tbsp capers, finely chopped (optional or you can use chopped green olives instead)
2 cloves garlic, minced
1 tsp onion powder
1 tsp oil from the sun-dried tomato jar (or substitute with olive oil)
¼ tsp salt
¼ tsp ground black pepper
½ cup (120 mL) balsamic vinegar

Directions:

  1. Combine the chopped tomatoes, basil, sun-dried tomatoes, capers, garlic, onion powder, salt, and pepper in a bowl.
  2. Mix to combine and set aside to allow the flavors to meld.
  3. Put on toasted bread and enjoy!
